It comes from a vineyard on porphyric soils at an altitude of 420 m.
Selection of ripe Gewürztraminer grapes in the vineyard and at the sorting table.
Spontaneous fermentation in contact with the skins for 4 weeks in acacia barrels.
To reduce the "heat", we added 30% rapports
during fermentation. Maturation for 20 months in large oak and acacia barrels.
