FROM BERRY TO BOTTLE

Our aim is to bring the genuine, unadulterated taste of the grape, a particular terroir and the people who cultivate it into the glass. The liquid memory of a vintage in all its facets.

Our grapes come from leased vineyards around Merano and from small grape producers from Trento to Bolzano, with whom we have formed solid partnerships over the years. It is important for our partners to know that their grapes are processed by us and we implement jointly developed strategies in the vineyard. We know our "materia prima" very well, we observe, control and ensure that only excellent grapes enter the cellar every year, because this is the only way to create lively wines with depth, complexity and substance.

We leave the fermenting musts in contact with the grape skins for a longer or shorter period of time. The result is dynamic wines that are constantly changing and full of flavor. It takes a lot of experience and patience to make stable wines with substance but at the same time lightness, which is why the wines mature for a very long time in large wooden barrels before they are bottled.

We do not use pure yeasts or any other oenological products that could alter the wine. Only a little sulphur for preservation with a maximum of 50 mg/l. All wines are bottled unfiltered.
